Spicy carrot and lentil soup
INGREDIENTS 4 large carrots sliced 1 large brown onion chopped 1 glove garlic minced 1 cup of red lentils (rinse lentils) 2 tablespoons of olive oil 1 tablespoon of butter 2 tablespoons of coconut cream 2 tablespoons of plain yogurt ½ bunch of fresh coriander finely chopped 2 teaspoons of Vadouvan curry mix; a mild French version of curry (buy at Herbies Darling street Rozele ) Salt & pepper to taste 1 litre of chicken or vegetable stock
METHOD 1. Fry onions & garlic in oil 2. Fry spices lightly few minutes. 3. Add carrots & lentils stir 4. Add stock bring to boil then simmer until carrots & lentils cooked 5. Take of heat add coconut cream, butter & yogurt 6. Blend with a stick mixer or blender 7. Stir in chopped coriander and serve with your favourite Artisan bread.
